scallion eggs

Crispy Scallion Eggs

  • 2-3 stalks scallion
  • 1 egg
  • cooked rice
  • soy sauce
  • sesame oil
  • Yori Ssamjang sauce
  • seaweed snacks, cut up into small scallion-sized pieces (scissors are easier here!)
  • sesame seeds
  • salt & pepper
  1. Slice scallions and place into a medium heat pan, sautéing for 1-2 minutes. Push them closer together so they're spread out in a circle that the egg will mostly fit over.
  2. Crack egg on top and make sure the scallions are under the egg white. Cook for 2 mins, then cut the heat and cover the pan with a lid for 1-2 mins. Check by lifting the lid to see if the egg white is cooked through.
  3. Place over warm rice. Drizzle soy sauce, sesame oil, seaweed snacks, sesame seeds and salt & pepper to your preference. Top with ssamjang, sriracha or chili oil and mix together for a simple & delicious breakfast fried rice.
