Gochujang Fried Rice

Serves 4
- 3 cups cold day-old jasmine rice
- 3 eggs
- 1 small onion, diced
- 4 cloves garlic, minced
- 1 medium carrot, diced
- 1 small zucchini, diced
- 3 tbsp Yori Gochujang
- soy sauce
- sesame oil
- 2 green onions, sliced
- neutral oil
- sesame seeds + black pepper
- (optional) chicken, steak or spam
- Scramble eggs in a hot oiled pan until just set. Remove and set aside.
- Cook onion and carrot 3–4 minutes until lightly caramelized. Add zucchini and garlic; cook 1–2 minutes more.
- Add rice and break up clumps. Let it crisp slightly before stirring.
- Drizzle Yori Gochujang directly into the pan and toss until glossy and evenly coated. Add a dash of soy sauce and sesame oil.
- Fold eggs back in and finish with green onions, sesame seeds and black pepper.
