Gochujang Fried Rice

Serves 4

  • 3 cups cold day-old jasmine rice
  • 3 eggs
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 small zucchini, diced
  • 3 tbsp Yori Gochujang
  • soy sauce
  • sesame oil
  • 2 green onions, sliced
  • neutral oil
  • sesame seeds + black pepper
  • (optional) chicken, steak or spam
  1. Scramble eggs in a hot oiled pan until just set. Remove and set aside.
  2. Cook onion and carrot 3–4 minutes until lightly caramelized. Add zucchini and garlic; cook 1–2 minutes more.
  3. Add rice and break up clumps. Let it crisp slightly before stirring.
  4. Drizzle Yori Gochujang directly into the pan and toss until glossy and evenly coated. Add a dash of soy sauce and sesame oil.
  5. Fold eggs back in and finish with green onions, sesame seeds and black pepper.
